14. Black Eyed Peas Masala Curry with Indian Sweet lassi.
Ingredients :
(Serves – 6 people)

1 1⁄4 cup Black Eye Peas

Salt to taste
(Serves – 3 people)

1⁄2 inch ginger, finely chopped
-
2 garlic cloves minced
-
1⁄2 medium sized onion finely chopped
-
1⁄2 medium tomatoes finely chopped
-
1⁄4 teaspoon cumin seeds
-
1⁄4 teaspoon turmeric powder
-
1⁄4 teaspoon red chili powder/paprkia
-
1⁄4 garam masala powder
-
1⁄2 teaspoon coriander powder
-
2 cups water
-
1 tablespoons oil
-
1 to 2 tablespoon chopped coriander leaves

Salt as required
Direction :
Soak + Boil

Wash and soak Black Eye Peas overnight, boil in a pot with a lid until it is soft and tender (20-25 minutes). Try to mash with fork to check if it is cooked. Once cooked, drain the cooked peas.
To Make Masala Curry

In a pan heat oil and add cumin seeds, cook for about half min. Then add minced ginger and garlic and sauté for a min.

Once ginger and garlic is sautéed add onion and cook for about 2 min or till onion sweats.

Then add chopped tomato and cook till it oozes out oil.

Now add dry Indian spices like turmeric powder, red chili powder, cumin powder, and cook for a min.

Once all the spices blend well with each other then add boiled black eye peas. Stir well.

When Black Eye Peas blend well with spices then at the end add garam masala and salt to curry. Mix well.

Garnish with chopped coriander leaves.

Serve with rice
Rice
(Serves 7 - 8 People)
Ingredients :

1 cup Rice
-
3 cups of water
Directions
-
In a medium saucepan, bring water to a boil. Add rice, and a pinch of salt. Bring pan back to a simmer then lower heat and cook, covered, 18 minutes, or until rice is tender and water is absorbed.

Remove from heat and let sit, covered, 5 minutes, then fluff with a fork and serve.
Note: - Use 1.5 cups to serve 10-11.
Indian Sweet Lassi
Ingredients :
(Serves 7 - 11 small cups)

1.5-3 cups whole milk yogurt
-
1-2 cup whole milk
-
6-8 tbsp cane sugar*, or as desired
Instructions :
Combine all ingredients in a blender and blend until completely smooth. Serve immediately.
Note: - Use the small quantity to serve 6 small cups and larger quantity to serve more than 6 cups.
