12. Turon- Filipino -Banana Lumpia with Handmade Ice cream.

Ingredients :

(Serves 3 People)

  • Six spring roll wrappers

  • 1 1⁄2- whole ripe bananas, cut into quarters lengthwise

  • 1 1⁄2- tablespoons brown sugar 

  • 1 - teaspoon cinnamon

  • ½-3/4 cup canola oil, for deep-frying

INSTRUCTIONS

Cut + Mix

  • Cut bananas into quarters lengthwise. Mix brown sugar with cinnamon powder in a paper bowl. 

Coat + Wrap 

  • Place square lumpia wrapper on a work surface with one point of the square facing you. Coat banana with brown sugar and cinnamon mix and place it horizontally on lower 1/3 of lumpia wrapper.              

 

Fold

  • Fold the tip of the square wrapper up to cover the banana. Fold the tip of the right side and left side in to create an envelope. Use both hands to roll the wrapper into a log. Moisten the top tip of the wrapper with water and continue to roll the wrapper up to seal. Repeat with the remaining ingredients. 

Heat

  • Add about 1/2-inch to 1-inch of vegetable oil to the frying pan. Once the oil is at the proper temperature, carefully place banana rolls seam side down into the pan. Work in batches and do not overcrowd the pan. Cook on each side for 90 seconds to 2 minutes until golden in color. Place on a wire rack set over a paper towel-lined baking sheet to drain. Repeat with remaining turon.

Handmade Ice-Cream

Ingredients - Serves 3 : 

  • ½ cup whole milk 

  • ½ cup cream

  • ¼ cup of sugar

  • ½ teaspoon vanilla extract

  • 1/2 cup ice-cream salt ( Morton)

  • 1-2 cups Ice

Instructions :

ADD+ COMBINE

  • Add 1/2 cup whole milk, 1/2 cup cream, 1/4 cup sugar, and 1/2 teaspoon vanilla extract to a mixing cup and stir until well combined. Add the mixture to a small zipper bag. Take a larget zipper bag and fill will with ½ cup ice and little rock salt. Place the smaller bag with all the ice-cream ingredients inside the larger bag. Cover it with more ice and rock salt.   

WRAP + SHAKE

  • Wrap the bag in a towel and shake it for 5 minutes or until the liquid in the smaller bag turns into ice cream.
